Well, this post shall be about food, as I am currently noshing on something utterly delicious.
Every week, Fil, JT and I have a glorious dinner, TACO NIGHT!
One afternoon grocery trip to Wal*Mart I saw a cheap little box of Taco Bell double decker taco dinner in a box. It came with cheese sauce, hard shell tacos, tortillas and taco seasoning from Taco Bell. We decided to make taco dinner one night, we had no idea how incredibly good it’d be and how much of a weekly thing it’d become.
This is how we do taco night for vegetarians.
You’ll be needing the following:
- 1 box, Taco Bell Double Decker Dinner
- 1 oz, lean beef
- 1 bag, MorningStar Farms meal starters meat crumbles
- Taco seasoning (for beef)
- 1 – 2 large Hass avocados
- 3 tablespoons of sour cream
- Lemon juice
- Garlic powder, pepper, salt, chopped onions
- 1 box, Zataran’s Spanish rice
- 1 can, Hunt’s fire roasted tomatoes
- 1 can, vegetarian refried pinto beans
- Start the two taco meats, brown the beef and the meat crumbles. Preheat the oven to 350 degrees for the taco shells. Unwrap the tortillas, wrap them in a slightly damp towel and pour the cheese sauce into a shallow bowl.
- Chop the avocado(s) and place in a food processor with sour cream, lemon juice, garlic powder, pepper, salt and chopped onions. Blend until slightly smooth, but with some chunks.
- Place the hard shells into the oven, let them get hot for 5-7 minutes.
- Make Spanish rice with the tomatoes
- Put the beans on low heat, mix in pepper and salt.
- Heat the cheese sauce for 15 seconds and the tortillas for 1 minute.
- Spread a thin layer of cheese sauce over the soft tortilla.
- Put the tacos together, serve with the rice and beans on the sides.
Utterly delicious and it’s JT’s favourite dinner. He looks forward to it the whole week. You can easily sub out the double decker for the hard shell by Taco Bell. The taco seasoning that comes with the box dinner makes the fake meat wonderful. Mm,mm,mmmm.
